Here's a winter-specific Badam Puri recipe, a sweet whose taste will make you want to eat it again and again.
Badam Puri Recipe
A traditional Karnataka sweet, similar to a puri, tastes exceptionally good. This winter sweet warms the body and is a treasure trove of flavor.
 
     Ingredients (for 4 servings)
Maida – 1 cup
Semolina – 1/4 cup
Baking soda – a pinch
Salt – 1/2 teaspoon
Sugar – 1 teaspoon
Milk – 1/4 cup
Almonds – 20 (soaked in hot water and ground into a paste)
Cloves – 12-15
Oil – for frying
For the syrup:
Sugar – 1 cup
Water – 1 cup
Cardamom – 2 (crushed)
Method:
Prepare the almond paste
Soak the almonds in hot water for 15 minutes, peel them, and grind them into a fine paste.
Kneading the Dough
Combine flour, semolina, baking soda, salt, and sugar in a bowl. Add a little oil and almond paste. Add milk and knead into a soft dough. Cover and let it rest for 10 minutes.
Making the Syrup
In a pan, add sugar, water, and cardamom, and prepare the syrup over medium heat. The syrup should be slightly thick.
Making the Puris
Make small balls of dough. Roll each ball into a round shape, apply oil on top, fold, and then fold again to form a triangular shape. Place a clove in one corner.
Frying and Dipping in the Syrup
Fry the puris in hot oil over medium heat until golden brown. Then dip them in the lukewarm syrup for 10 minutes.
Serving
Transfer the almond puris onto a plate and serve hot.
